Anyone know how to make EASY mexican chicken in crock pot?

Hi, I want to make a mexican-type of shredded chicken in my crock pot, to use in fajitas later on for dinner. I've looked up recipes online but they all require tons of ingredients...a lot of them also call for salsa which I can't use because I have a picky child that doesn't like Salsa. Is there a crock pot recipe that just calls for the basics like chicken, tomato juice or paste, chicken taco or fajita seasoning, and maybe some onion? Something easy and simple like that? I would wing it myself, but I'd prefer to have an actual recipe so I don't screw up and mess up dinner. Please help. Thanks!
